Flank Steak with Prosciutto and Goat Cheese

Ingredients:

1 flank steak weighing 3 to 4 pounds approx.
5 slices of prosciutto.
1/2 a cup of chopped walnuts.
1/2 a cup of flat leaf fresh parsley.
1 clove of garlic finely chopped.
4 oz of goat cheese.
salt and pepper to taste
olive oil to taste
butcher twine for cooking that meat perfectly

Instructions:

Right off the bat, remove the excessive fat and sinew from the flank steak you have picked.
Next is butterflying the flank steak. For this, make sure you are using large sharp knife so that you can slice it up with ease. You can start at one corner, keep on slicing into the center of the steak along with the grain and the long edge. Just keep the knife parallel and continue cutting and stopping 1/2 inch from the other long edge. What you should get is a steak which resembles an open book. Now flip the steak over and check for uniformity
Next step is to season the steak with salt and pepper as per your taste.
Now cover the steak with the prosciutto slices.
Next, chuck the walnuts, parsley, and garlic in the food processor till it forms a grainy paste and place it evenly across the prosciutto.
Now add the goat cheese (generously if you may!) in the same way. Roll the steak away from you keeping it tight.
Now use the butcher twine to secure the flank steak in a proper way. You can start in the middle of the steak and then turn it around towards the outside. The knots will hold the steak together.
Fire up the grill around (400-450 F) and lightly brush your steak with olive oil before searing it over the direct heat.
Give each side 2 minutes for a total of 8 minutes. Now move the steak to indirect heat for about 20 minutes and check if the internal temperature has hit 130 F.
Lastly, remove the steak from the grill and tent it with foil. Allow the steak to sit for about 8-10 minutes. Simply slice, serve and relish.
